01 The Loaves

Bread, slow and patient.

Long ferments, stoneground flour, a dark crust. Four loaves in steady rotation, with a fifth bake — fougasse, baguette, brioche — depending on what the morning calls for.

02 The Counter

Pastries, all morning.

Hand-laminated, three-day proofed, finished with butter from a single Normandy dairy. The croissant is the house signature; everything else earns its place beside it.

03 The Bar

A small espresso bar at the counter, beans roasted weekly in south London. We pour what we'd want to drink — no syrups, no sizes-as-statements, just decent coffee with the bread.

04 The Kitchen

Everything you taste was made here, today.

No central bakery, no overnight trucks. Doughs are mixed in the early hours, shaped by hand, and turned out warm onto the counter. Whatever isn't sold goes home with the team or to neighbours — never to tomorrow.
